~ Chemical Structure ~

Trans fats are created when unsaturated fatty acids are converted to saturated fatty acids by the addition of hydrogen atoms in a chemical process called hydrogenation.

~ Foods High in Trans Fatty Acids ~

Hydrogenation is used commercially to convert less expensive oils such as cottonseed, soybean and sunflower to saturated fats that resemble more expensive animal fats in regard to spreadability
and texture. Trans fatty acids are found in cooking oils, margarine, shortening and processed foods made with these ingredients, such as French fries, fried chicken or fish, doughnuts, cakes, pies, pastries,muffins and crackers.

~ Dietary Guidelines ~

Several studies corroborate that foods high in trans fatty acids are just as likely to elevate total blood cholesterol levels and increase levels of LDLs as foods high in saturated fat.

In addition, trans fats also reduce the levels of HDLs.

Therefore, dietary intake of trans fatty acids should be limited.
The Food and Drug Administration(FDA)is currently engaged in reviewing dietary guidelines and will require the labeling of trans fatty acids on foods in the future.
